    Seasonal Ideas from the Adina Kitchen

    After months in lockdown, many of us have found plenty of new hobbies to entertain. And, if you found yourself spending more time in your kitchen, trust us you’re not alone. Chef Lynn Clemente is the Head Chef of Vibe Hotel Sydney Darling Harbour and, like you, he's been enjoying getting creative in the kitchen and cooking with vibrant flavours and colours.

    Chef Lynne recently took off his Vibe hat and joined us at Adina Apartment Hotel Surry Hills, as part of our Adina Chef's Series, to share a little professional know-how and some easy to make recipes you can whip up at home or in the spacious self-contained kitchens of any Adina Apartment Hotel


    According to Chef Lynn, a good meal starts with quality ingredients and he prioritises using local Australian produce to bring the flavour of Australia to his dishes.

    For those that like to cook when on holidays, our Adina Hotels are conveniently located in the heart of cities across Australia, with handy access to local supermarkets for sourcing fresh, nutritious produce for your meal. Using ingredients that are full of powerful antioxidants and immunity boosters like ginger and garlic - Chef Lynn has created a healthy, simple and easy to prepare chicken dish that’s perfect for the cooler months ahead. 

    Chef Lynn’s Ginger and Coriander Chicken makes four generous portions and is accompanied by perfectly cooked broccolini and soba noodles. 

    SHOPPING LIST

    Ginger – 2-inches / Garlic – 5 cloves (crushed) / Coriander roots – ½ bunch / Chicken – whole with skin on / Sesame oil – 10ml / Salt – 10g / Peppercorn – ½ tsp / Soba noodles – 100g / Broccolini – 1 bunch

    For the Ginger Scallion Sauce 

    Green shallots – 1 bunch / Ginger – 3-inches / Salt / Oil

    METHOD

    To begin, rub some salt into the skin of a whole chicken and place it in a large pot, along with a sliced 2-inch piece of ginger, five crushed garlic cloves, half a bunch of coriander roots and half a teaspoon of whole peppercorns. Cover the chicken with cold water, bring the contents to boil on high heat and then simmer on low heat for 40 minutes. While the chicken is cooking, boil some soba noodles and steam a bunch of broccolini using a cup of liquid from the chicken pot. This will infuse the beautiful flavours of the broth into the other elements of the dish.  

    We think the real secret to this dish is Lynn’s four-ingredient Ginger Scallion Sauce. 

    Heat a small saucepan of oil, roughly one cup. Slice a bunch of shallots, using both the green and white parts of the shallot and finely chop a 3-inch piece of ginger. Mix the shallots and ginger with salt to taste and pour the hot oil over the mixture. Leave the sauce to cool while you serve the other elements of the dish. 

    Gently remove the chicken and portion it. Serve on top of the soba noodles along with the broccolini and add a little extra broth from the pot. Spread a tablespoon of the sauce on to the chicken to add the ultimate burst of flavour to your dish. 

    Insider Tip: Reduce the remaining stock along with the chicken scraps to be used as a base for soups or other dishes during your stay.
